Ingredients
- 2 LBS. Shredded Chicken
- 1 t. Chipotle Chili Powder
- 1 Pkg. Frozen Chopped Spinach
- 1 (14 oz) Can Sweet Corn
- 1 (14 oz) Can Black Beans
- 1 T. Taco Seasoning
- 3 T. Chopped Cilantro
- Juice of 1 Lime
- 2 C. Shredded Cheddar/Jack Cheese
- 1 Pkg. Egg Roll Wrappers
- 2 Medium Avocados
- 1/4 C. Ranch Powder
- 1 C. Sour Cream
- 1/4 C. Cilantro
- 1/2 t. Chipotle Chili Powder

Mix together well. Roll in Menlo egg roll wrappers. Rub seam with water or egg white to seal. Deep fry until crispy
