Pumpkin Walnut Cake

Ingredients

  • 1 3/4 cups sugar
  • 1 heaping cup pure pumpkin puree (not pumpkin pie filling)
  • 8 large eggs
  • 3 1/4 cups flour
  • 2 tsp ground cinnamon
  • 1/2 tsp kosher salt
  • 1/2 tsp ground cloves
  • 1/4 tsp grated nutmeg
  • 2 tsp pure vanilla extract
  • 3/4 cup chopped walnuts
  • 3 tbsp light brown sugar

Directions

  1. Preheat oven to 350. Line a 10-inch springform pan with parchment paper and spray generously with nonstick cooking spray.

  2. Place the sugar in the food processor and process for 30 seconds. Add the pumpkin, eggs, flour, cinnamon, salt, cloves, nutmeg and vanilla. Process until smooth. Pour into prepared pan and smooth the top.

  3. Combine the walnuts and brown sugar in a small bowl and sprinkle on top of the cake batter. Bake 55 to 65 minutes or until a toothpick inserted into the center comes out clean. Let cool in the pan then remove.
