Blue Cheese Potato Salad

Ingredients

  • 4 slices bacon
  • 2 lbs. red new potatoes, unpeeled
  • 1/4 cup olive oil
  • 3 tbsp white vinegar
  • 1 tsp black pepper
  • 1/2 tsp salt
  • 1 cup chopped green onion
  • 1/2 cup crumbled blue cheese

Directions

  1. Cook bacon in a large skillet over medium heat until crisp. Drain; pat dry with paper towels. Crumble and set aside.

  2. Bring a large pot of salted water to a boil. Add potatoes; cook until tender but still firm, about 15 minutes. Drain, cool, and quarter potatoes.

  3. Whisk together oil, vinegar, pepper and salt in a large bowl. Add potatoes, bacon, green onion and cheese; toss to coat.
