Parmesan Roasted Corn on the Cob

Ingredients

  • 3/4 cup grated Parmesan
  • 2/3 cup mayo
  • 1 tbsp chili powder
  • 1 tsp black pepper
  • 1/2 tsp salt
  • 6 ears fresh sweet corn, husks and silks removed

Directions

  1. Preheat an outdoor grill to medium-high heat.

  2. Stir together Parmesan, mayo, chili powder, pepper and salt in a bowl. Brush mixture on corn. Wrap each ear in foil coated with nonstick cooking spray.

  3. Grill foil-wrapped corn, turning occasionally, until kernels begin to brown, about 10 minutes. Sprinkle with additional Parmesan, if desired.
