Jicama Slaw

Ingredients

  • 3 tbsp fresh lime juice
  • 1/2 tsp red pepper flakes
  • 1/2 tsp chili powder
  • 6 tbsp rice wine vinegar
  • 1 tsp sugar
  • 6 tbsp olive oil
  • Kosher salt and black pepper
  • 1/2 medium jicama, peeled and julienned
  • 4 medium carrots, peeled and julienned
  • 1/2 small napa cabbage, shredded
  • 1 small red onion, thinly sliced
  • 1 English cucumber, julienned
  • 1 red bell pepper, julienned
  • 2 tbsp chopped fresh cilantro

Directions

  1. In a small bowl, combine the lime juice, red pepper flakes, chili powder, vinegar, sugar and olive oil. Season with 1 tsp each salt and pepper and whisk to combine.

  2. Combine the jicama, carrots, cabbage, red onion, cucumber, bell pepper and cilantro in a large bowl and toss.

  3. Add the dressing to the veggies. Let sit 15 minutes, stirring 2 or 3 times.
