beef stew

Serves 10 people

Ingredients

  • 600g diced topside
  • 2 medium onions
  • 2 celery stalks
  • 1 capsicum
  • 3-4 medium potatoes
  • 2 carrots
  • flour
  • 1 tin tomatoes
  • 750ml - 1litre beef stock (or veg) better to use TetraPak than cubes
  • garlic
  • parsley
  • thyme
  • 1/2 to 2/3 glass wine
  • anchovies?
  • rosemary - one sprig is good

Directions

  1. Season meat w salt and coat w flour (or not – makes frying difficult)

  2. Fry medium-high beef and onions till brown

  3. Xfer to stockpot, add 1 can tomatoes, beef stock, some garlic, parsley, thyme, wine

  4. mmer 1.5 hrs

  5. Add veg, simmer 1 hr
