My Mom’s Muffins

Ingredients

  • Softened butter, for greasing the pan and serving
  • 1 cup whole wheat flour
  • 1/2 cup all-purpose flour
  • 1/4 cup ground flaxseed (flaxseed meal)
  • 1 cup old-fashioned rolled oats
  • 1/2 cup packed brown sugar
  • 1/2 tsp kosher salt
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/2 cup walnuts, roughly chopped
  • 1 banana
  • 1 cup buttermilk, plus more as needed
  • 1 large egg
  • 1/2 cup applesauce
  • 1/4 cup molasses
  • 1 tsp vanilla extract
  • 1/2 cup raisins

Directions

  1. Preheat the oven to 350. Thoroughly grease 12 muffin cups.

  2. In a large bowl, combine the flours, ground flaxseed and oats, along with the brown sugar, salt, baking soda, baking powder, cinnamon and walnuts. Stir to combine.

  3. Peel the banana and mash it up with a fork. In a separate bowl, mix together the buttermilk, egg, applesauce and banana. Stir it together then add the molasses and vanilla and stir it around.

  4. Pour the wet into the dry, stirring, until it just barely comes together. The batter should be really wet and stick.

  5. . Add the raisins. Scoop 1/4 cup of batter into the prepared muffin cups and bake until the muffins are deep golden brown, 16-18 minutes. Serve with softened butter.
