Watermelon Feta Bites

Alternate honeydew and cantaloupe for a pretty presentation.
Forgo the toothpicks and turn this into a big salad in a bowl.
Use cubes of fresh mozzarella for a milder cheese.

Ingredients

  • 1/2 small seedless watermelon
  • 12 oz. block feta
  • 3 tbsp balsamic glaze
  • 12 large basil leaves, plus some smaller leaves for garnish

Directions

  1. You only need half of the watermelon, so use a sharp knife to carefully cut the watermelon in half lengthwise. Put on half of the watermelon cut side down, then slice it crosswise. Cut off the rind so you’re left with random pieces. Cut the watermelon into equal-size strips then cut the strips into equal-size cubes. Use the sharp end of the knife to remove any stray seeds you see.

  2. Cut the feta into cubes that are a little smaller than the watermelon cubes.

  3. To assemble the bites, set a piece of feta on top of a piece of watermelon and secure if with a toothpick. Continue until you’ve used all the watermelon and feta. Place them on a serving plate and drizzle with the balsamic glaze all over the top. Stack and roll up the basil leaves, then cut the roll into thin strips. Arrange the basil all over the bits, garnishing with some smaller basil leaves.
