Funnel Cakes

Ingredients

  • Vegetable oil, for frying
  • 2 large eggs, lightly beaten
  • 1 cup whole milk
  • 1 cup water
  • 1 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup strawberry preserves
  • 2 tbsp apple juice
  • Confectioners' sugar

Directions

  1. Fill a Dutch oven or large, deep heavy-bottomed skillet halfway with oil, and heat over medium-high heat until a deep-fry thermometer registers 375.

  2. In a large bowl, whisk together eggs, milk, 1 cup water, and vanilla until well combined; whisk in flour, granulated sugar, baking powder and salt until smooth.

  3. Cover bottom of a funnel spout with your finger, and carefully ladle 1/2 cup batter into funnel. Hold funnel several inches above oil, and release batter, moving funnel in a spiral motion until all batter has flowed out of funnel. Scrape with a rubber spatula, if necessary.

  4. Fry, using tongs to turn once, until golden brown, 2-3 minutes per side. Let drain on a wire rack. Repeat with remaining batter.

  5. In a small bowl, whisk together preserves and apple juice until smooth. Sift confectioners’ sugar onto warm funnel cakes; serve immediately with strawberry mixture.
