Pressure Cooker Baked Beans

Ingredients

  • 1 medium onion, chopped
  • 1 cup chopped celery
  • 4 slices bacon, chopped
  • 1 lb. dried navy beans
  • 2 1/2 cups water
  • 3/4 cup ketchup
  • 1/4 cup molasses
  • 1 tbsp Worcestershire
  • 2 tsp dry mustard
  • 1/2 tsp crushed red pepper
  • 1/2 tsp garlic powder
  • 1 tbsp cider vinegar
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Directions

  1. Cook onion, celery and bacon in an Instant Pot on Saute mode, stirring occasionally, until the onion is softened, about 5 minutes. Turn off the heat. Add beans, water, ketchup, molasses, Worcestershire, dry mustard, crushed red pepper and garlic powder. Close and lock the lid. Cook at High Pressure until the beans are tender, 1 1/2 to 2 hours.

  2. Carefully release the pressure. Stir in vinegar, salt, and pepper.
