Mint Lime Pesto

Use on everything from pineapple to grilled fish.

Ingredients

  • 2 cups packed fresh mint leaves
  • 1/4 cup grated Parmesan
  • 1 tbsp chopped pistachios
  • 1 tbsp lime juice
  • 2 tbsp canola oil

Directions

  1. Combine mint, Parmesan, pistachios, and lime juice in a food processor. With processor running, drizzle in oil; process until smooth.
