Jam Slice

Nice made with Jam or Lemon Honey
Quick and easy to make

Prep time: 15 minutes
Cook time: 30 minutes
Serves 20 people

Ingredients

  • 125 gr butter
  • 1/2 C caster sugar
  • 1 egg
  • 1 1/2 C plain flour
  • 1 t baking powder
  • 1/2 C jam/lemon honey
  • Topping:
  • 1 egg
  • 1/4 C caster sugar
  • 1 C coconut

Directions

  1. Melt butter, gently.

  2. Add sugar and egg, whisking well.

  3. Add flour and baking powder, mix well.

  4. Press into paper lined 20cm square cake tin.

  5. Spread evenly with jam.

  6. Topping:

  7. Mix egg, sugar and coconut well.

  8. Sprinkle topping over base.

  9. Bake at 180oC for approx 30 minutes.

  10. Cool in tin, then slice.
