Lemon Yoghurt Cake

Serves 12 people

Ingredients

  • 1 C oil
  • zest 2 lemons
  • 2 eggs
  • 1 3/4 C sugar
  • 1/2 t salt
  • 1 C plain yoghurt
  • 3 T lemon juice
  • 2 C self raising flour

Directions

  1. Beat oil, eggs, sugar and zest until thick and well blended.

  2. Add yoghurt and lemon juice, beat briefly.

  3. Add flour and salt, mix until all combined.

  4. Pour mixture into oiled and floured / or paper-lined 25cm ring pan.

  5. Bake at 180oC approx 45 minutes, or until sides

  6. of cake start to shrink and skewer comes out of centre cleanly.

  7. Cool in tin for 10 minutes, then turn out carefully on rack to cool.

  8. Serve, sprinkled with icing sugar and/or with yoghurt or whipped cream on the side.
