Mexican Steak and Eggs

Ingredients

  • Leftover Flank Steak, chopped (see recipe)
  • Olive oil
  • 1 cup jarred pico de gallo
  • 4 eggs, beaten
  • Warm tortillas and a squeeze of lime, for serving

Directions

  1. Heat a cup of chopped steak in a couple of tbsp. of olive oil over medium-high heat for 3 minutes. Reduce heat to medium and add pico and eggs. Cook, turning with a spatula, until the eggs are set, about 5 minutes. Serve with warm tortillas and a squeeze of lime.
