Corn Bread

  • 2 eggs
  • 1/4 cup vegetable oil
  • 1/4 cup sugar
  • 1 cup plain yogurt
  • 1 cup all-purpose flour
  • 1 cup stone-ground cornmeal
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp baking powder


  1. Grease an 8-inch cast-iron skillet and place it on a heated, covered grill.

  2. In a large bowl, whisk together eggs, vegetable oil, sugar, and yogurt.

  3. In a second bowl, combine the flour, cornmeal, baking soda, salt and baking powder. Add the dry ingredients to the wet ones in two batches, stirring until just combined.

  4. Fill the pan with half of the batter. (Refrigerate other half for leftovers).

  5. Cook it on the grill, covered, for 10-12 minutes.
