Loin Lamb Chops with Minted Yogurt

Ingredients

  • Leaves from 1 bunch mint, cleaned
  • 3 garlic cloves, peeled
  • 1/3 cup olive oil
  • 3 tbsp. balsamic vinegar
  • 1 tsp salt
  • 1 cup Greek yogurt
  • 6 loin lamb chops

Directions

  1. Heat the grill.

  2. In a blender, mix everything but the lamb and the yogurt. Combine half that mixture with the yogurt. Slather the other half on the meat.

  3. Grill the lamb chops for about 4 minutes each side. Serve with the yogurt mixture and a side of cooked carrots.
