Sausage Coil with Greens and Lemon

Ingredients

  • 2 1-lb. sausage coils
  • 1 handful tender baby greens (like arugula or spinach)
  • 2 fat, juicy lemons

Directions

  1. In separate frying pans, cook the coils for about 10 minutes per side over medium-high heat.

  2. Remove the sausages and plate them stop the greens. Squeeze the lemons into the pan and swirl the juice around for 10 seconds. Drizzle it over the sausages.
