Avocado BLTs

  • 8 slices thick-cut bacon
  • 1 ripe avocado
  • 4 tbsp. mayo
  • Juice of 1/2 lemon
  • 2-3 tomatoes, thickly sliced
  • Salt and pepper
  • 4 leaves fresh basil, roughly torn
  • 2 tbsp. olive oil
  • 6 slices soft oatmeal or oat-nut bread, toasted
  • 1 head Boston or butter lettuce, leaves separated


  1. Fry your bacon.

  2. While it’s frying, cut the avocado in half and scoop out the flesh. In a small bowl, mash it with the mayo and lemon juice.

  3. Sprinkle the tomato slices with the salt, pepper and basil and drizzle them with the olive oil.

  4. Spread each slice of bread with the avocado mayo and make 3 sandwiches with the bacon, lettuce and tomatoes. Slice 1 sandwich in half and split it between 2 kids’ plates.
