Stuffed Peppers with Italian Sausage

  • Bell peppers
  • 1 egg, beaten
  • Chopped parsley
  • Bread crumbs
  • Marinara sauce
  • 1 lb. Italian sausage, cooked and crumbled
  • Toasted pine nuts
  • Parmesan


  1. Preheat oven to 350. Cut off and remove the tops of the peppers, and seed, rinse, and dry them. Poke holes in the bottoms with a fork.

  2. In a bowl, combine egg, some chopped parsley, bread crumbs, marinara, and the sausage.

  3. Spoon the mixture into the peppers and place them in a baking dish, then top with more sauce and toasted pine nuts and Parmesan.

  4. Bake until the tops are golden brown, 35 minutes.
