Country-Club Chicken Salad

  • 6 strips bacon
  • 1/2 small red onion
  • 1 large stalk celery
  • 2 scallions
  • Shredded rotisserie chicken
  • 3 tbsp. mayo
  • 3 tbsp. sour cream
  • Squeeze of lemon
  • Salt and pepper, to taste
  • Boston lettuce
  • Tomato wedges


  1. Cook bacon until crispy; crumble and set aside.

  2. Finely chop onion, celery and scallions. In a large bowl, combine it all with the chicken.

  3. Stir in mayo, sour cream, lemon juice, salt and pepper.

  4. Serve on a bed of Boston lettuce, garnished with the bacon and a few tomato wedges.
