Cantelope Salad

Ingredients

  • Cantelope melon
  • Cucumber
  • Cherry tomatoes
  • Fresh mint
  • Goat's cheese, crumbly
  • 1/8 cup olive oil
  • 1/2 Tbsp red wine vinegar

Directions

  1. Slice melon and cucumber in long pieces

  2. Halve the cherry tomatoes

  3. Tear the mint leaves

  4. Combine melon, cucumber, tomatoe and mint

  5. Combined oil, vinegar and S&P to taste

  6. Toss

  7. Crumble cheese on top
