Mexican Rice Salad

Ingredients

  • 3 tbsp. lime juice
  • 2 tsp chipotle hot sauce
  • 2 tsp agave
  • 1/2 tsp kosher salt
  • 1/4 cup olive oil
  • 1 1/2 cups cooked white rice
  • 1 chopped romaine heart
  • 3 chopped scallions
  • 1 cup halved cherry tomatoes
  • 1/2 cup crumbled queso fresco
  • 1/4 cup toasted pepitas

Directions

  1. Whisk lime juice with hot sauce, agave, and salt in a large bowl. Whisk in olive oil. Add rice, romaine, scallions, tomatoes, queso fresco and pepitas.
