Macaroni Delight

A very tasty, healthier alternative to ‘Hamburger Helper’ type meals.

Serves 3 people

Categories: One pan dinner

Ingredients

  • 1 lb ground beef, pork, sausage, turkey, chicken, bison or whatever...
  • Oil for frying
  • 1 t. salt
  • 1/4 t. pepper
  • 2-3 garlic clove (to taste) minced
  • 1/2 C chopped onion
  • 1/2 C chopped green pepper
  • 1 14 oz can diced tomatoes (I use unsalted)
  • 1 T. chili powder (or to taste)
  • 1 T. sugar
  • 2 C buttermilk (low or no fat ok)
  • 4 thick slices velveeta (about 4 oz.)
  • 6 - 8 oz. uncooked elbow macaronis

Directions

  1. Bring a large pot of water (for macs) to a boil, meanwhile saute meat along with salt, pepper, and chili powder in oil ’til most of watery liquid has boiled away, and meat begins to brown.

  2. Drain meat leaving drippings in pan, put meat on a plate in warm oven.

  3. Add garlic, onions, peppers to pan and fry ‘til onion is soft (don’t let garlic brown).

  4. Return meat to pan, add tomatoes, buttermilk, sugar and macaronis.

  5. Stir well.

  6. Layer Velveeta on top.

  7. Bring to a boil.

  8. Cover and simmer for 20 min.

  9. Stir and serve.
