White Bean Puree

Ingredients

  • 2 15-oz. cans white beans (cannellini or Great Northern)
  • 1 cup water
  • 3 garlic cloves, cut in half
  • 1 sprig fresh rosemary
  • 1/4 cup olive oil
  • 1 head garlic, roasted
  • 2 tsp chopped fresh rosemary
  • Kosher salt and white pepper, to taste

Directions

  1. Drain and rinse the beans and set aside. Place the water, fresh garlic, and whole sprig of rosemary in a medium saucepan. Bring to a boil, add the beans, and simmer for 3-4 minutes. Drain, reserving the bean cooking water. Remove the rosemary sprig.

  2. Place the beans and boiled garlic in a food processor. Add a couple of tbsp. of the bean water to thin out the consistency and process until smooth. Then add 3 tbsp. of the oil, the roasted garlic and chopped rosemary and puree again. Taste and add more oil if necessary. Season with salt and pepper. Let cool.
