Chocolate Ganache

Ingredients

  • 1/3 cup heavy or whipping cream
  • 2 tbsp. superfine sugar
  • 6 oz. bittersweet chocolate
  • 1 tbsp. bourbon
  • 1 tsp vanilla extract
  • Pinch of sea salt

Directions

  1. In a small saucepan, heat the cream over medium heat to almost boiling, then add the sugar and stir to combine.

  2. Meanwhile, place the chocolate in a medium bowl. Remove the cream from the heat and pour over the chocolate. Whisk vigorously until it’s melted and well combined. Add the bourbon, vanilla and salt, stirring constantly until the mixture is cool to the touch.
