Spiced Beef Fajitas with Salsa Fresco and Guacamola

Ingredients

  • For Marinade:
  • 2 garlic cloves, crushed
  • 1/2 tsp crushed red pepper flakes
  • 1/2 tsp ground cumin
  • 1/2 tsp dried oregano
  • 1/4 tsp ground allspice
  • 2 tbsp. Mexican beer
  • 1 tbsp. olive oil
  • 1 lb. skirt or flank steak
  • For Guacamole:
  • 2 fresh green chiles, seeded and finely chopped
  • 2 tbsp. finely chopped cilantro leaves
  • 1/4 cup fresh lime juice
  • 2 medium avocados, peeled, pitted and chopped
  • Salt and black pepper
  • 4 flour tortillas
  • Salt and black pepper
  • 1 handful shredded lettuce
  • 1 recipe salsa fresca (see recipe)
  • 1/2 cup sour cream

Directions

  1. For marinade, combine garlic, red pepper flakes, cumin, oregano, allspice, beer, and oil. Add steak and turn to coat. Cover and refrigerate for 1 hour.

  2. For Guacamole: Combine chiles, cilantro, lime juice, and avocado. Mash with a potato masher until well combined but still chunky. Add salt and pepper to taste. Cover and refrigerate.

  3. Grill steak over hot coals for 7 minutes per side for medium rare. Let stand for 5 minutes before carving on the diagonal into 1/2-inch slices. Warm tortillas by setting directly over grill for 30 seconds per side.

  4. Place steak slices on warmed tortillas. Sprinkle with salt and pepper. Top with lettuce, salsa fresca, guacamole, and sour cream. Roll up and serve hot.
