Vietnamese Peanut Sauce

Ingredients

  • 1 tbsp. peanut oil
  • 3 garlic cloves, minced
  • 1 tbsp. minced shallot
  • 1 tsp sambal oelek (chili garlic sauce)
  • 1 tsp tomato paste
  • 1/3 cup chicken broth or water
  • 1/4 cup hoisin sauce
  • 2 tbsp. creamy peanut butter
  • 1/2 tsp sugar
  • 1/4 cup finely chopped roasted peanuts, for garnish
  • 1 fresh red Thai chile pepper, seeded and thinly sliced, for serving
  • Sriracha sauce, for serving

Directions

  1. Heat the oil in a small saucepan. Add the garlic, shallot, sambal oelek, and tomato paste and cook, stirring, until the garlic and shallot are golden brown, about 30 seconds. Add the broth, hoisin, peanut butter and sugar and whisk to combine. Bring to a boil, reduce the heat to low, and simmer until the sauce has thickened, about 3 minutes. Remove from the heat and let cool slightly before serving.

  2. Garnish the sauce with the peanuts, chile pepper and a drizzle of Sriracha.
