Mascarpone Polenta

Ingredients

  • 3 cups whole milk
  • 3 cups water
  • 2 tbsp. unsalted butter
  • 2 tsp salt
  • 1 1/2 cups polenta or yellow cornmeal
  • 8 oz. container mascarpone

Directions

  1. In a 2-quart heavy-bottomed saucepan, combine the milk, water, butter, and salt. Bring to a boil over medium heat. Don’t let it boil over.

  2. Add the polenta, whisking constantly until the mixture comes back to a boil. Reduce the heat to a simmer and cook, stirring often, until the polenta is creamy and tender, about 45 minutes.

  3. Remove from the heat and stir in the mascarpone. Cover and keep warm until ready to serve.
