Apple-Mint Puree

Ingredients

  • 2 medium Pink Lady, Gala, or Fuji apples
  • 2 cups apple cider
  • 1/4 cup chopped onion
  • 3 tsp cider vinegar
  • 2 tbsp. unsalted butter
  • 2 tbsp. chopped fresh mint

Directions

  1. Peel and core the apples, chop them into 2-inch pieces, and add to a small pot. Add the cider, onion, and 2 tsp of the vinegar. Bring to a boil, reduce the heat to a simmer, and cook, until the apples are tender and the flavors have come together, about 20 minutes. Remove from the heat.

  2. Transfer the apple mixture to a blender and add the butter, mint, and remaining 1 tsp vinegar. Blend until you have a smooth puree. Serve warm.
