Sausage Stuffing

Ingredients

  • 1 tbsp. olive oil
  • 1 lb. mild fresh Italian sausage, casings removed
  • 1 1/2 cups finely diced onion
  • 1/2 cup finely diced celery
  • 1 tbsp. minced garlic
  • 1 tbsp. chopped fresh sage
  • 1/2 tsp fresh thyme leaves
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp grated nutmeg
  • 1 1/2 cups finely diced cored Pink Lady or Granny Smith apples
  • 1/2 cup roughly chopped chestnuts
  • 11 oz. bottle hard apple cider, such as Crispin
  • 4 cups cubed sourdough bread, toasted in a 350 degree oven until crisp
  • 1 large egg, beaten
  • 4 oz. fresh goat cheese, crumbled, at room temp

Directions

  1. Heat oil in a medium saute pan over medium heat. When hot, add the sausage and cook until it begins to brown, 2-3 minutes. Add the onion, celery, garlic, sage, thyme, salt, pepper and nutmeg, and cook, stirring as needed, until the veggies have softened, 5 minutes. Stir in the apples, chestnuts, and cider, and cook 3-4 minutes. Remove the pan from the heat and let cool slightly.

  2. Place the bread in a large heat-resistant bowl, pour the onion mixture over it, and toss well. Add the egg and goat cheese, and toss well. Refrigerate until ready to use.
