Watermelon, Heirloom Tomato and Burrata Salad

Ingredients

  • 6 cups baby arugula
  • 3 cups diced seedless watermelon
  • 1 cup tomatoes, cut into halves, quarters, or wedges
  • 1/2 cup thinly sliced sweet onion
  • 1 tbsp. fresh basil chiffonade
  • 1 tbsp. fresh mint, chiffonade
  • Fresh Herb and Red Wine Vinaigrette (see recipe)
  • 8 oz. ball burrata cheese, divided into 4 to 6 pieces
  • Sea salt and black pepper
  • Olive oil, for drizzling

Directions

  1. In a large bowl, combine the arugula, watermelon, tomatoes, onion, and herbs. Toss the salad with all of the vinaigrette.

  2. Divide the salad among 4 to 6 salad plates. Place the burrata on top of each, season with salt and pepper to taste, and give each salad a drizzle of oil. Serve immediately.
