Broccoli salad

Ingredients

  • 3 oz bacon
  • 1-1/2 lb broccoli crowns, chopped finely
  • 1/4 c red onion, chopped finely
  • 1/4 c fresh parsley, packed, chopped finely
  • 1 T orange zest
  • 2 T orange juice
  • 1/2 c raisins, chopped
  • 1/4 c nuts, chopped
  • 1/2 t black pepper
  • 1/4 t sea salt, or more to taste
  • 1/3 c mayo, or more to taste

Directions

  1. To chop the broccoli, remove most of the stem and cut it into florets. Then, put the broccoli florets into the food processor in a single layer (this took 3 batches) and pulse about 10 times until the broccoli is finely chopped.

  2. In a large bowl, combine the chopped broccoli, red onion, parsley, orange zest and juice, raisins, nuts, salt, and pepper. Stir everything well to combine, then add the mayo. Stir until the mayo is evenly distributed.

  3. Crumble the bacon into the bowl. Taste, and adjust the seasonings with salt and pepper.
