Bacon Leek Mashed Potatoes

Ingredients

  • 1 lb. Yukon Gold potatoes, quartered and peeled
  • 2 center-cut bacon slices
  • 1 cup chopped leeks
  • 1/4 cup whole milk
  • 3 tbsp. sour cream
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 tbsp. chopped fresh chives

Directions

  1. Cook potatoes in simmering water until tender, 20 minutes. Cook bacon in a skillet over medium high until crispy. Remove and crumble bacon; add leeks to skillet. Reduce heat to medium low; cook 8 minutes. Drain potatoes; mash with milk, sour cream, salt, pepper, and leeks. Top with chives and crumbled bacon.
