Sweet Potatoes with Candied Pecans

Ingredients

  • 4 large sweet potatoes, peeled, halved lengthwise, and sliced 1/2-inch thick
  • 1 tbsp. vegetable oil
  • 1 cup pecan halves
  • 1/2 cup firmly packed light brown sugar
  • 1 tsp salt

Directions

  1. Preheat oven to 450. Line a large rimmed baking sheet with foil; spray foil with cooking spray.

  2. On prepared pan, toss together sweet potatoes and oil; arrange in a single layer on pan.

  3. Bake for 20 minutes.

  4. In a small bowl, stir together pecans, brown sugar, and salt. Sprinkle pecans over sweet potatoes. Bake 10 minutes more. Serve immediately.
