Peanut Butter Banana Bread Muffins

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, melted
  • 1/2 cup creamy peanut butter
  • 1 1/2 cups mashed ripe banana
  • 1 cup firmly packed light brown sugar
  • 1/2 cup chopped banana
  • 1/3 cup sour cream
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup chopped peanuts

Directions

  1. Preheat oven to 325. Spray a 12-cup muffin pan with cooking spray.

  2. In a medium bowl, whisk together flour, baking soda, baking powder and salt.

  3. In a large bowl, whisk together melted butter and peanut butter. Add mashed banana, brown sugar, chopped banana, sour cream, eggs, and vanilla, whisking to combine. Fold in flour mixture just until combined. Divide batter among prepared muffin cups. Top with peanuts.

  4. Bake until a wooden pick inserted in center comes out clean, about 25 minutes. Let cool in pan for 10 minutes. Remove from pan, and let cool completely on a wire rack.
