Chili-Roasted Sweet Potatoes

Ingredients

  • 1 1/2 lbs. sweet potatoes, cut into 1-inch pieces
  • 2 tbsp. olive oil
  • 1 tsp chili powder
  • 1 tsp kosher salt
  • Black pepper
  • 1/4 cup warm water
  • 1 garlic clove, minced
  • Juice of 1 lime
  • 2/3 cup cilantro
  • 3 tbsp. sunflower seed butter
  • 1/4 tsp kosher salt

Directions

  1. Toss sweet potatoes with olive oil, chili powder, salt and pepper. Spread on a baking sheet and bake at 450, stirring halfway through, until crisp, 35 to 45 minutes. Puree water, garlic, lime juice, cilantro, sunflower seed butter and kosher salt in a blender. Serve with the potatoes.
