Rainbow Carrot Fries and Red Pepper Hummus

Ingredients

  • 3/4 cup canned chickpeas, drained and rinsed
  • 1/2 cup chopped roasted red peppers
  • 2 tbsp. tahini
  • 1/2 garlic clove
  • Juice of 1 lemon
  • 1 tsp kosher salt
  • 1/4 tsp smoked paprika
  • Rainbow carrot sticks

Directions

  1. Puree chickpeas, roasted red peppers, tahini, garlic, lemon juice, salt and paprika in a blender. Serve with rainbow carrot sticks.
