Tortellini Caprese Salad

  • Kosher salt
  • 1 lb. cheese tortellini
  • 1 pint assorted cherry tomatoes, halved
  • 8 oz. mini mozzarella balls
  • 1/2 cup chopped fresh basil
  • 1/3 cup olive oil
  • 2 tbsp. white balsamic vinegar
  • Black pepper


  1. Bring a large pot of salted water to a boil. Add the tortellini and cook as directed. Drain and rinse under cold water until cook; transfer to a bowl.

  2. Toss the tortellini with the tomatoes, mozzarella, basil, olive oil and vinegar. Season with salt and pepper.
