Pork Chops with Radicchio and Pear

Ingredients

  • 4 bone-in pork chops
  • 4 tbsp. olive oil
  • 1 tbsp. butter
  • 2 firm pears, cut into 1/2-inch cubes
  • 2 tbsp. sugar
  • 2 tbsp. plus 2 tsp white balsamic vinegar
  • 2 heads radicchio, torn
  • 1 tsp chopped fresh thyme

Directions

  1. In a large nonstick skillet, cook chops in 2 tbsp. oil over high for 5 minutes per side; season.

  2. Transfer to plates. In same skillet, cook butter, pears, sugar and 2 tsp vinegar, covered, over medium-low, stirring often, until tender, about 5 minutes; season. Transfer to a bowl. Add remaining oil, remaining vinegar, and radicchio to skillet. Toss until wilted; season. Top chops with pears and thyme. Serve with radicchio.
