Grilled Garlic-Parmesan

Ingredients

  • 3 lb. zucchini, ends trimmed
  • 1/4 cup butter, softened
  • 3 garlic cloves, minced
  • 1 1/2 tbsp. chopped fresh parsley
  • 1 tbsp. olive oil
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded Parmesan cheese

Directions

  1. Preheat an outdoor grill to medium-high heat.

  2. Slice zucchini lengthwise into 1/2-inch thick planks. Stir together butter, garlic and parsley in a small bowl.

  3. Brush each side of zucchini planks with oil; sprinkle with salt and pepper. Grill zucchini until grill marks form, 2 to 3 minutes. Flip zucchini; spread with butter mixture, then sprinkle with cheese. Grill until grill marks form, cheese has melted, and zucchini is tender, 2-3 minutes more.
