Peach-Tomato Caprese Salad

Ingredients

  • 2 tbsp. olive oil
  • 1 tbsp. balsamic vinegar
  • 1/2 tsp salt
  • 2 large heirloom tomatoes, thinly sliced
  • 2 ripe peaches, halved, pitted and sliced
  • 8 oz. ball fresh mozzarella, thinly sliced
  • 8 to 10 fresh basil leaves

Directions

  1. Whisk together oil, vinegar, and salt in a bowl. Layer tomatoes, peaches and mozzarella on a platter. Drizzle with dressing; scatter with basil leaves and additional salt.
