Sweet Potato Butter

Ingredients

  • 3 large sweet potatoes, peeled and chopped
  • 1 1/2 McIntosh apples, peeled, cored and chopped
  • 2 cups water
  • 2/3 cup firmly packed light brown sugar
  • 1/2 cup fresh orange juice
  • 2 tsp ground cinnamon
  • 1/4 tsp kosher salt
  • 1/4 tsp ground nutmeg

Directions

  1. In a slow cooker, stir together all ingredients. Cover and cook on HIGH until sweet potatoes are tender, about 4 hours. Uncover and cook 30 minutes more. Let cool for 30 minutes. Using an immersion blender, process mixture just until smooth. Refrigerate in an airtight container for up to 2 weeks.
