Pork Chops with Smoky Tomato Chutney

Ingredients

  • 1 1/2 tsp kosher salt
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1/2 tsp chili powder
  • 1/2 tsp black pepper
  • 4 boneless pork chops
  • 4 tbsp. unsalted butter, divided
  • 1 medium sweet onion, thinly sliced
  • 1 garlic clove, minced
  • 1/2 cup chicken broth
  • 1/2 cup tomato chutney
  • 1 tbsp. chopped fresh oregano
  • Garnish: chopped fresh oregano

Directions

  1. In a small bowl, stir together salt, paprika, cumin, chili powder, and pepper. Season pork with salt mixture.

  2. In a large saucepan, melt 2 tbsp. butter over medium-high heat. Add pork; cook, turning once, until browned, about 6 minutes per side. Remove from pan.

  3. Melt remaining 2 tbsp. butter in pan. Add onion; cook, stirring occasionally, until light golden brown, about 8 minutes. Add garlic; cook until fragrant, about 1 minute. Stir in broth, using spoon to scrape browned bits from bottom of pan. Stir in tomato chutney and oregano.

  4. Reduce heat to medium; return pork chops to pan. Cook until sauce is thickened and cooked through, about 10 minutes. Garnish with oregano.
