Apple Muffins

Ingredients

  • 1/2 cup unsalted butter at room temperature
  • 1/2 cup sugar
  • 1/4 cup of brown sugar packed
  • 1 large egg
  • 1 cup plain low fat yogurt ( not greek style)
  • 1 cup whole wheat flour
  • 1 cup flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 tbsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 2 cups peeled, cored and finely chopped baking apples. ( 2 large apples)
  • For Topping:
  • 6 tbsp dark brown sugar packed

Directions

  1. Preheat oven to 375

  2. Grease muffin pan with butter or non stick cooking spray.

  3. In the bowl of an electric mixer, beat together the butter, sugar and brown sugar until fluffy, 1-2 minutes.

  4. Add the egg and mix well by beating.

  5. Beat in the yogurt. the batter will look grainy.

  6. Add the flours, baking powder, baking soda, salt, cinnamon and nutmeg. Beat on low speed until just combined. The batter will be very thick.

  7. Add the chopped apples and mix with a spoon until just combined. Do not overmix.

  8. Put into muffin pan with ice cream scoop. The cups will be very full. Sprinkle the 6 tbsp of brown sugar evenly over the top.

  9. Bake the muffins for 25-30 minutes or until a toothpick inserted into the centre comes out clean.
