Broccoli-Cauliflower Casserole

Ingredients

  • 1 lb. fresh or thawed frozen broccoli florets
  • 1 lb. fresh or thawed frozen cauliflower florets
  • 1/2 cup chopped red bell pepper
  • 1/4 cup all-purpose flour
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 cups whole milk
  • 3/4 cup shredded smoked Cheddar cheese
  • 1 tbsp. Dijon
  • 3/4 cup French-fried onions
  • 1/4 cup grated fresh Parmesan

Directions

  1. Preheat oven to 350. Spray a 2 1/2 -quart baking dish with cooking spray.

  2. Pat broccoli and cauliflower dry with paper towels if using thawed frozen. Place in prepared dish; add bell pepper.

  3. In a medium saucepan, whisk together flour, salt, and pepper; whisk in milk. Bring to a simmer over medium heat, whisking constantly. Reduce heat to medium-low; cook until thickened, about 3 minutes. Remove from heat; add Cheddar and Dijon, whisking until smooth. Pour over vegetables. Sprinkle with French-fried onions and Parmesan.

  4. Bake until bubbly, 25-30 minutes.
