Authentic Mexican Breakfast Tacos

Ingredients

  • 6 oz. chorizo sausage
  • 6 eggs
  • 1/4 cup milk
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 8 (6-inch) corn tortillas
  • 1 cup shredded Monterey Jack cheese
  • Dash hot pepper sauce
  • 1/2 cup salsa
  • Chopped fresh cilantro, for garnish

Directions

  1. Brown sausage in a skillet over medium-high heat, stirring to break up lumps, about 4 minutes. Transfer to a paper towel-lined plate to drain.

  2. Whisk together eggs, milk, salt and pepper in a bowl, then stir into skillet. Cook over medium heat, stirring occasionally, until almost set. Add sausage and continue cooking, stirring occasionally, until set.

  3. Meanwhile, heat tortillas in another skillet over high heat until hot and crispy on the edges but still pliable, about 45 seconds per side.

  4. Sprinkle cheese over tortillas and top with scrambled eggs and sausage, pepper sauce and salsa. Garnish with cilantro.
