CHICKEN SCALLOPINI IN SPAGHETTI SAUCE

Ingredients

  • 2 chicken breasts
  • 1 cups spaghetti sauce
  • 1 egg
  • 3/4 cups Italian flavored bread crumbs
  • 1 tablespoon vegetable oil
  • 1 teaspoon garlic, minced
  • 4 slices Mozzarella cheese
  • Grated Parmesan cheese

Directions

  1. Beat egg with a fork until white and yolk are blended. Sprinkle bread crumbs on a sheet of waxed paper. Dip chicken into egg and then roll in crumbs. Coat both sides of chicken.

  2. In a large skillet heat oil with garlic over medium to medium-high heat. Add meat and saute 4 minutes on each side, until golden brown.

  3. Top each piece of meat with Mozzarella slice. Pour spaghetti sauce around meat.

  4. Bring sauce to a boil and reduce heat. Cover and simmer 5 minutes until cheese is melted.

  5. Sprinkle Parmesan on top.
