Honey Sage Cornbread Loaf

Ingredients

  • Cooking spray
  • 1 1/2 cups flour
  • 1 1/4 cups yellow cornmeal
  • 3/4 cup sugar
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 large eggs
  • 1/2 cup olive oil
  • 1 cup buttermilk
  • 1 cup frozen corn, thawed
  • 1 tbsp. fresh sage, chopped

Directions

  1. Preheat oven to 350. Spray 9×5-inch loaf pan with cooking spray. Mix flour, cornmeal, sugar, baking powder, baking soda and salt in a large bowl. Mix eggs, olive oil and buttermilk in a small bowl. Add egg mixture, corn, and sage to dry ingredients; stir to combine. Pour batter into pan. Bake 1 hour. Serve with honey.
