French Toasted Salmon Sandwich

Serves 4 people

Ingredients

  • 1 can salmon, drained and flaked
  • 1/3 c chopped celery
  • 1/8 tsp pepper
  • 1/4 c mayonnaise
  • 2 Tbsp sweet pickle relish
  • 8 slices bread
  • butter
  • 1 egg
  • 2/3 c milk

Directions

  1. Combine flaked salmon, celery, pepper, mayonnaise, and relish, blending will with a fork.

  2. Spread equal amount of salmon mixture on 4 slices of bread, cover with remaining 4 slices of bread.

  3. Heat butter in a skillet over medium low heat. Beat egg with milk.

  4. Dip sandwiches carefully in the egg mixture, then brown on both sides in hot butter in skillet.
