Panko-Crusted Acorn Squash

Ingredients

  • 1/4 cup panko
  • 1/4 cup grated Parmesan
  • 2 tsp chopped fresh thyme
  • 1 tsp chopped fresh sage
  • 1 tsp minced garlic
  • 1/2 tsp lemon zest
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/4 tsp crushed red pepper
  • 2 acorn squash
  • 1 tbsp. olive oil

Directions

  1. Stir together panko, Parmesan, thyme, sage, garlic, lemon zest, kosher salt, black pepper and crushed red pepper. Halve squash lengthwise; discard seeds. Cut halves into thirds; place on a baking sheet. Brush olive oil; sprinkle with panko mixture. Bake at 425 until golden brown, about 35 minutes.
